Eating clean and healthy is not complicated as many people think. It’s so simple. It took me 10 min to put together this salad. Make sure your fridge is packed with whole foods and greens. Always have some healthy options pre cooked like quinoa, roasted sweet potatoes, beens, legumes, grains, rosted Tofu… you can easily prepare salads, hot or cold Poke Bowls.

Low-Carb Vegan Bowl:

  • Avocado
  • Cauliflower Rice
  • Edamame
  • Beetroot/Zucchini/Carrot Noodles
  • Cherry Tomatoes – Spinach.
  • Dressing: olive oil, lemon juice, salt and pepper.
